Banana Vanilla Honey French Toast

This is a recipe that I took off one of my favorite food blogs, Cooking Healthy For Me. It is a great recipe and healthy. You’ll have to taste it to believe it. Today’s my birthday and I fixed it for myself. It was fantastic. Surprisingly, it’s not bad for you! It tasts like pure indulgence….with only ONE tablespoon of butter.

Take two thick slices of whole wheat bread, dip them in egg (2 whites, 1 yolk) with a touch of Splenda, vanilla and OJ. Then cook them in a hot cast-iron pan sprayed with non-stick cooking spray…no butter here!

Served over the top of a banana sliced and cooked in a pan with non-stick cooking spray, brown sugar Splenda blend, walnuts and Orange Juice! ….no butter here!

The “syrup” is a melted tablespoon of butter, two tablespoons of honey and 1/8 teaspoon of vanilla bean paste….which can be substituted with vanilla extract. This was incredible….it tasted like butterscotch!

It was a delicious breakfast, a delicious indulgence….and with Orange Juice, Bananas, Honey, Whole Wheat Bread and Walnuts – not too bad for you, either!

Banana Vanilla Honey French Toast (Serves 1-2)

Ingredients
• 2 thick slices whole wheat bread
• 2 eggs – 1 yolk removed, lightly beaten
• 1 Tablespoon orange juice
• 2 teaspoons Splenda
• 1/8 teaspoon vanilla (extract or paste)
• 1 banana cut into slices
• 1/4 cup chopped walnuts
• 1-4 Tablespoons orange juice
• 1 Tablespoon brown sugar Splenda blend
• 1 Tablespoon butter, melted
• 2 Tablespoons Honey
• 1/8 teaspoon vanilla (extract or paste)
• Cooking Spray

Directions
1. In a shallow bowl, mix eggs, 1T orange juice, Splenda and 1/8 t vanilla. Set aside.
2. Heat a non-stick pan and spray with cooking spray. Add Banana, walnuts, Brown Sugar Splenda blend and 1T orange juice. Cook over medium heat and continue to turn bananas as they brown. If the mixture dries, add more orange juice, one tablespoon at a time.
3. In a small bowl, mix melted butter, honey and vanilla. Set aside.
4. Heat either another non-stick (or well seasoned cast iron) pan. When hot, turn heat down to medium and dip bread in egg mixture – let it sit for about 10 seconds each side. Add cooking spray to hot pan and place dipped bread to pan.
5. When the first side is browned, lift up with spatula, re-spray pan and flip. Cook second side to a golden brown.
6. When both slices are cooked, place on plate, put banana mixture on-top and drizzle with honey butter!
